Join Mark for this professional three-day course to learn everything from making a chocolate wedding cake all the way through to decorating it.
Course tutor: Mark Tilling
You will learn new and contemporary techniques with Mark who will show you how to make chocolate sponge cakes, chocolate fillings, how to use syrup alcohol flavouring and even the science behind working with chocolate.
Mark will teach you about storing chocolate, shelf life and planning guidelines for making professional chocolate cakes. This is an essential course to attend whether you are making cakes for a business, or for friends and family.
But it’s not all work – you will also have the opportunity to make taste comparisons of cake fillings, ganache and various grades of chocolate.
The techniques covered include:
- Colouring chocolate and cocoa butter
- Making chocolate pencils
- Making smooth and rustic decorations
- Working on marble to make fans and wraps
- Making chocolate roses
