An Audience with Robin Weir, Exclusive Ice Cream Tasting and Demonstration 10th May 2011, 10am-12.30pm at Squires Kitchen, Farnham, GU9 8BB Ice cream specialist Robin Weir will be coming to Squires Kitchen in May to demonstrate how to make different types of ice cream and give a talk on its history, physics and chemistry. Robin is acknowledged as one of the foremost experts on ice cream and demonstrates and lectures all over the world about ice cream making from the 17th century up to the present day.
There will be a demonstration by Robin himself and you will be given the opportunity if you wish to join him in making an ice cream, sorbet or granita. This demonstration and tasting will allow you to experience a variety of interesting flavours and textures. As well as refreshments and ice cream tasters, you’ll receive a goody bag and a signed copy of the ultimate ice cream book, Ice Creams, Sorbets and Gelati by Caroline and Robin Weir (Grub Street), worth £25.
Over a decade of research and millions of calories have gone into this new book, which contains over 400 recipes as well as the history of ice cream and dozens of previously unseen pictures and illustrations. Do you love home baking and fancy putting your skills to the test? BBC Two is looking for amateur bakers across the country to take part in The Great British Bake Off series two.

As an ‘amateur baker’ your main source of income cannot come from commercial baking in a professional environment and you cannot have ever worked full-time as a baker or chef. You cannot have acquired any formal NVQ or other professional catering qualifications in the past 10 years. -
What's been going on at Squires Kitchen's International School
Squires Kitchen’s baking school has been open for two months now and it’s great to hear that it has your seal of approval. The smell of baking, chocolate and cakes has been wafting round the building and it’s been lovely to meet students who have enjoyed the classes so much, leaving with new skills to try out on their friends and family. Recent classes at the new baking school included Cookbook Baking Classics where students came to learn how to make traditional cakes from scratch such as Victoria sponge, gooey chocolate cake and spicy sticky gingerbread, just like grandma used to make. Make sure you book early for the next one on 13th January. Perfect Pastry is another new addition to the course list and the first class proved popular with students coming to learn the skills and techniques involved in making shortcrust pastry, sweet flan pastry and choux. Ann Skipp also shared her top tips for baking blind, resting times and how to achieve great results every time. The next Perfect Pastry course is on 11th Dec, just in time for festive entertaining! Take home your creations and freeze them for Christmas. Mark Tilling’s chocolate classes have also been very popular, with our 3 Day Chocolate Wedding Cake Course being the first of its kind to be held in the new school room. Students who attended this course made some truly stunning creations under Mark’s professional guidance. Carlos Lischetti's first class at Squires Kitchen's International School
This week, we ran our first class with the incredibly talented sugarcrafter and pastry chef Carlos Lischetti. Carlos shared his flawless sugar modelling skills with students who came along to learn how to recreate his style on their own cakes and models. The class sold out quickly and was a huge success with students learning how to make a toy soldier from developing concepts on paper to building a figure from sugar, step-by-step. If you missed out, then you’ll be pleased to know that Carlos will be holding another class next February.
